How to prepare

  • Bring a large tray that can accommodate the size of the fish chosen for cooking, then line it with a large piece of aluminum foil.
  • Place the fish in the tray on top of aluminum foil.
  • Place the coriander, cumin, paprika, chili, curry and pepper in a small dish, then add a tablespoon of salt or as desired, then stir the spices to mix well, then distribute half the amount of spices inside and outside the fish.
  • Place the rest of the spices in a deep dish, then add the coriander, dill, onion, garlic, pepper and half a cup of olive oil, then stir the ingredients until they are mixed well.
  • Put a cup of corn oil in the frying pan and place the frying pan on medium heat until the oil is hot in the frying pan. Then add the potatoes and fry them until they become light golden in colour. Then place the fried potatoes on the mixture of vegetables and spices in the dish and stir the ingredients to mix well.
  • Place the potato mixture inside the fish to fill it, then place the rest of the potatoes around the fish, then distribute the lemon slices over the fish, then cover the fish with a second piece of aluminum foil, then pour two cups of water into the tray around the fish, then distribute several slices of lemon to give an appetizing scent while grilling the fish.
  • Place the fish in the oven for an hour to an hour and a half until it is completely cooked.
  • Take the fish out of the oven and leave it for about a quarter of an hour to rest, then serve it.

  • Empty this mixture into a mixing bowl, then add the fish pieces and stir them to soak and flavor them, then cover them and place them in the refrigerator for half an hour.
  • Heat the grill, take the fish out of the refrigerator, and grill it on both sides without overcooking it so that it does not dry out and lose its flavor and nutritional value, then place it on a plate.
  • Add a spoonful of butter and melt it in the same pan, then add the shallot onions and fry them completely.
  • Add salt and black pepper, then fresh cream and a spoonful of Dijon mustard, mix well, then add the capers and peppercorns.
  • Gradually add butter while mixing so that the sauce turns into cream, then add a squeeze of lemon and put the sauce over the grilled fish, then decorate the fish with cane garlic and serve it with salad.
