How to make diet vegetable soup

Every person experiences weight gain in his life, and it does not necessarily have to be excessive. Sometimes the weight increases by several kilograms during a certain period of a person’s life, and some people may suffer from excessive and permanent gain. In both cases, a balanced and healthy diet must be followed.

One of the best methods of dieting is for the body to obtain all the nutrients, but in moderate proportions, in order to maintain the health of the body and avoid diseases, general weakness, and yellowing of the face. Soups are among the foodstuffs that give impressive results in weight loss because of the nutritional elements they contain. With few calories and burning fat at the same time, this is how to prepare vegetable soup for the diet.

 

Fresh vegetable soup

Ingredients

  • A large onion, finely chopped.
  • Two zucchinis, cut into small squares.
  • Two carrots cut into squares.
  • Half a cup of mushrooms cut into slices.
  • Three tablespoons of natural lemon juice.
  • Half a cup of fresh peas.
  • Three tablespoons of oats.
  • Four cups of warm water.
  • Small spoon of salt.
  • Half a teaspoon of cumin.
  • Half a teaspoon of turmeric.
  • Two tablespoons of olive oil.
  • Finely chopped parsley.

How to prepare

  • Place the chopped onions in a pot on the fire with a little olive oil and stir continuously over low heat until the onions become light golden in color. It is preferable to maintain low heat when using olive oil in cooking, in order to avoid losing its nutritional elements.
  • Add the chopped carrots to the onions and stir for two minutes until the ingredients blend together.
  • Cover the pot until the carrots wilt a little.
  • Add the peas while stirring, then add the zucchini and mushrooms gradually to give each one sufficient time to mature.
  • Cover the pot until the vegetables are slightly cooked.
  • Add spices and seasonings while stirring gently, to avoid mashing the vegetables.
  • Place the oats with warm water on low heat, stir until completely dissolved, then add it to the vegetable mixture and leave it with good, quiet stirring until it boils, to avoid the formation of clumps.
  • Place the soup in a serving dish after it becomes medium thick, then sprinkle chopped parsley on top and add lemon juice to it.
  • The soup is served hot with brown toast or bran bread to get a complete nutritional meal. If the soup is prepared for non-diet purposes, pieces of chicken or meat can be added, while increasing its density with oats and reducing the amount of water. Also, meat or chicken stock can be used as a substitute for water.

Carrot and ginger soup

the ingredients

  • One kilogram of peeled and chopped carrots.
  • One and a half tablespoons of fresh, chopped ginger.
  • Medium sized onion, chopped.
  • A teaspoon of crushed garlic.
  • A liter and a quarter of water.
  • Ninety milligrams of fat-free cooking cream.
  • Two tablespoons of olive oil.
  • pinch of salt.
  • A pinch of black pepper.

How to prepare

  • Heat the oil in a pot over medium heat, and fry the onions for five to seven minutes.
  • Add ginger and garlic and stir for two minutes, then add the carrots. After two minutes, pour the water.
  • Cover the pot when the mixture boils and leave it on low heat for thirty minutes until the ingredients are cooked.
  • Puree the soup in an electric blender until you obtain a homogeneous mixture.
  • Pour the cream, then sprinkle a little salt and pepper.
