  • One kilogram of roasted sesame seeds.
  • Half a cup of roasted and finely ground chickpeas.
  • A cup of roasted and finely ground peanuts.
  • A cup of ground sumac.
  • A quarter cup of ground fennel.
  • A quarter cup of ground anise.
  • A quarter cup of ground coriander.
  • Two tablespoons of ground cumin.
  • Lemon salt, and salt as desired.
  • Two tablespoons of olive oil.

 

How to prepare

  • Wash the green thyme, dry it well, remove the small stems, and rub it by hand until it becomes soft.
  • Peel the peanuts from the shells, toast them in a pan and leave them to cool.
  • Chickpeas are purified of impurities, as are all spices.
  • The thyme is ground by the herbalist to obtain fine-grained thyme.
  • Add two tablespoons of olive oil to the amount of ground thyme and rub by hand well. This step is optional, but it gives the thyme a soft texture and dark green color.
  • All spices are roasted one by one, and ground.
  • Add all ingredients to the thyme, stir, and add lemon salt and salt as desired.
  • Ground thyme is stored in tightly closed glass containers, and must be kept in the refrigerator.
