Sauteed vegetables

the ingredients

  • Four teaspoons of pure olive oil.
  • Two pieces of chicken fillet cut into slices.
  • Large onion cut into slices.
  • A lobe of mashed garlic.
  • Two fresh zucchini, cut into thin, unpeeled sticks.
  • A piece of carrot cut into sticks and peeled.
  • A piece of red sweet pepper, cut into sticks.
  • Ten mushrooms cut into slices.
  • A sweet green pepper cut into sticks.
  • Half a tablespoon of table salt.
  • ¼ teaspoon of black pepper.
  • A quarter tablespoon of fine coriander.
  • Six teaspoons of finely chopped parsley.

How to prepare

  • We choose a suitable, large and wide frying pan, put olive oil in it and put it on high heat.
  • Add the chicken pieces and continue stirring until the water dries up and the chicken is completely cooked.
  • We choose a large spoon with holes and take the chicken out of the pan and put it on a plate aside.
  • Place the chopped onions in the same pan and leave them over high heat until they change color and become yellow. We can add a little olive oil if needed.
  • We use a slotted spoon to take out the fried onions and place them next to the cooked chicken.
  • Place the zucchini and garlic in the pan over high heat, and continue to stir them for no more than two minutes, then add a quarter of a teaspoon of olive oil.
  • Add the carrots and leave them on high heat until the carrots become soft and toasted well.
  • Add the red and green sweet peppers, then add a little olive oil, and continue stirring the mixture for two minutes.
  • We add the mushrooms to the previous mixture and stir the ingredients together for a minute, then turn off the heat and stir the ingredients well.
  • Add the chicken and onions to the previous mixture, stir them well with the vegetables, then add a little salt, oregano, pepper, and coriander and stir the ingredients well.
  • Place the ready-made sauteed vegetables in a serving dish, and garnish with finely chopped parsley.
