The Haraq dish with its finger is considered one of the most famous traditional and popular Syrian dishes, as it is rich in nutritional elements and delicious, which will appeal to all members of the family, as women prepare it, but not many of them master it. Here, Madam, is how to prepare the Haraq dish with its finger.

Prepare the burner with his finger

Ingredients

  • Three cups of flour.
  • A cup and a quarter of water.
  • Half a teaspoon of salt.

lentils

  • Two cups of brown lentils.
  • Two teaspoons of salt.
  • Half a cup of tamarind infusion.
  • Three tablespoons of lemon juice.
  • half cup of olive oil.
  • Six medium-sized onions, cut into thin slices.
  • Three bunches of chopped coriander.
  • Six cloves of garlic, finely chopped.
  • Three loaves of bread, cut into small pieces.
  • A pomegranate, chopped.
  • Corn oil for frying.
  • Pickles, arugula, and green onions for serving and garnish.

How to prepare

  • Mix the flour with water and salt, and knead them together using your hands or a dough hook.
  • Continue kneading the dough until you get the desired result, which is a cohesive, smooth and soft dough, then cover the dough with a plastic bag, for a period of not less than twenty minutes.
  • Sprinkle a little flour on a cutting board, then roll it out to a thin thickness, then cut it into small squares.
  • Place it in a pot filled with water with a little salt, and leave it for no more than thirty minutes over medium heat.
  • Add lemon juice and tamarind infusion to the lentils, and leave them together until the ingredients boil well.
  • Place the cut dough squares into the mixture gradually, and continue stirring from time to time until the lentils are ready and fully cooked.
  • Fill a deep frying pan with corn oil so that you can fry small pieces of bread. After the bread is fried and turns golden, remove it from the oil and leave it to drain well.
  • Fry the onion slices in oil until they turn golden, and watch them carefully so they do not burn. Then add half the amount to the pot of lentils, and stir well.
  • Add half the amount of chopped garlic to the pot of lentils, and stir well.
  • Put the coriander and half the amount of garlic that you set aside in a plate, mix them well.
  • Place the lentils in a wide serving dish.
  • Heat the olive oil well, and sprinkle it on the lentils.
  • Garnish the lentils with fried bread, the garlic and coriander mixture, half the amount of fried onions, and pomegranate seeds of each type cut into lines.
  • Serve Haraq Finger at the dining table, with green onions, pickles, and arugula.

Burning his finger with pasta

Ingredients

  • A cup of lentils.
  • A cup of farfalle pasta, or any small pasta.
  • Three onions.
  • A clove of crushed garlic.
  • A cup of coriander.
  • Three cups of bread cut into cubes.
  • A pinch of salt, pepper and cumin.
  • Three tablespoons of lemon juice.
  • Three tablespoons of olive oil.
  • Pomegranate.

How to prepare

  • Boil the lentils in a pot over the fire, cover them with water, and leave them until they are half done.
  • Boil the pasta in another pot until it is also half cooked, then add it to the boiled lentils, and add salt, pepper and cumin.
  • Fry the onions and garlic in olive oil, then remove them from the heat, add the coriander and stir.
  • Add the mixture to the lentils and pasta and put them on the fire until they are completely cooked, leave a little water, then add the lemon and remove the pot from the heat.
  • Pour them into a serving bowl and garnish the dish with fried bread and pomegranates.
