It is a type of bread known in the Arab world, where the manufacture of saj bread has moved from ancient times to our present time, and saj bread is a thin bread and has a different taste from machine bread, and it is used in homes and restaurants in making Arabic pies, so everyone is creative and enthusiastic about it. To make it, here is an easy way to make saj bread.

How to make saj bread

Ingredients

  • Three cups of fine flour.
  • A cup and a half of warm water.
  • Half a teaspoon of salt.
  • A teaspoon and a half of instant yeast.
  • a tablespoon of sugar.

How to prepare

  • Mix the flour, salt and yeast together.
  • Add warm or lukewarm water and knead the dough for fifteen minutes until the dough becomes cohesive and easy to shape, meaning we do not make it so soft that it cannot be cut.
  • We cover the bowl and place it in a warm place until the dough ferments. The fermentation time for the dough is approximately one hour.
  • After an hour, we notice that the dough has swelled, and when bubbles appear, the dough has fermented.
  • We cut the dough into balls the size of a fist and put flour on them. The number of these pieces is approximately fifteen loaves, as we mentioned.
  • We use a rolling pin or rolling pin to roll the dough into a circular disc, and we continue to roll the dough until it becomes a circular disc.

  • While cutting and thinning the dough at the same time, we work to heat the baking sheet until the baking sheet becomes very hot, as follows:
    • We check whether the baking sheet is hot or not by sprinkling a little water. If the water evaporates very quickly, the baking sheet is ready for baking. If it is not hot, we leave it until it is heated, because if the baking tray is not hot, the dough will remain stuck to the baking sheet.
  • We spread the dough on the baking sheet, and rolling out the dough requires skill on the baking sheet, so some people resort to placing the loaf of dough on a disk of cloth so that the piece of dough can be placed easily.
  • When baking, we notice on the loaf that air bubbles have appeared on its surface, so we wait a minute until it bakes and the loaf turns blonde.
  • We turn the loaf over to the other side until it bakes, but no bubbles appear on this side, so we wait for one minute, then we pick up the loaf of bread from the baking sheet, put it in a bowl, cover it with a piece of cloth, and then we carry on baking until we finish the dough.

Saj bread with brown flour

Quantity :20 – 30 loaves

Ingredients

  • Two and a half cups of flour.
  • Three quarters of a cup of whole wheat flour (brown flour).
  • A tablespoon of soft instant yeast.
  • A teaspoon of baking powder.
  • Teaspoon salt.
  • Three tablespoons of sugar.
  • Quarter cup of oil.
  • Half a cup of warm milk.
  • Three quarters of a cup of warm water.

How to prepare

  • Mix the flour, brown flour, yeast, baking powder, salt, and sugar together.
  • Add oil, milk and water, and knead until the ingredients are mixed together and you have a cohesive dough.
  • Knead for ten minutes until the dough becomes smooth and homogeneous.
  • We shape the dough into a ball, put it in an oiled bowl, brush its surface with oil, and leave it in a warm place for an hour until it doubles in size.
  • We cut the dough, and this depends on the size you prefer, large or small.
  • Let it rest for 15 minutes.
  • Using a rolling pin, on a floured surface, flatten each ball into a disc.
  • Place the tablets on a piece of cloth, cover them with a second piece, and let them rest for 10 minutes.
  • We heat the baking sheet, place a loaf on it and wait for several seconds, until it begins to swell, then turn it over to the other side and wait until bubbles form and turn it over to the other side.
  • When you finish baking the saj, put it in a basket and cover it so that it does not dry out.

Tips

  • Some people use a wide, thick-bottomed non-stick frying pan instead of the saj, and both methods are suitable for baking the saj loaf.
