How to cook freekeh

Freekeh is one of the most important nutritional elements used in various dishes, as it can be prepared with chicken, meat, or in the form of soup.

 

Freekeh with chicken

350 grams of freekeh, two tablespoons of olive oil, 50 grams of butter, two cups of chicken broth, 350 grams of chicken thighs, a carton of milk, salt, black pepper, a tablespoon of mixed spices, a little ketchup.

How to prepare

  1. Place a pot on low heat and put the butter in it, then add the freekeh, salt and black pepper, and stir well.
  2. Add the chicken broth to the freekeh, cover the bowl and leave it for half an hour.
  3. We are preparing the chicken; We put the chicken in a bowl and coat it with oil, then add black pepper, mixed spices, and salt, then brush the chicken with ketchup and yogurt.
  4. We cover the chicken with foil, then put the chicken in the oven at 250 degrees Celsius, leave it for 40 minutes, and turn it every quarter of an hour.
  5. When the freekeh is cooked and the chicken is browned; Spread the freekeh on a plate and distribute the chicken on the surface.

Ingredients

Two large pieces of lamb leg, cut into small pieces, a teaspoon of cloves, a teaspoon of black pepper, a teaspoon of cardamom, a teaspoon of cumin, two cinnamon seeds, four onions, two tablespoons of salt, four sheets of paper. Laurel, eight cups of freekeh, four tablespoons of oil or ghee, a teaspoon of mixed spices, a teaspoon of ground cinnamon, a teaspoon of ground cardamom, three cups of green peas, a teaspoon of ground cardamom, a teaspoon of ground cumin, a cup. Almonds cut into halves.

How to prepare

  1. We put the meat and the whole spices in a deep pot, cover it with water and leave it until it is completely cooked, then we filter the broth.
  2. Put the oil in a large pot, put it on medium heat, then add the onions and sauté until they turn golden.
  3. Drain the freekeh, add it to the onions, and stir together until it dries.
  4. We add the ground spices (cardamom, cumin, salt, and pepper), add the broth to the freekeh, and leave it on medium heat for 15 minutes to absorb the broth.
  5. After the freekeh dries from the water, we add the peas, without stirring the freekeh, and place the pieces on the surface of the freekeh and leave it on low heat for half an hour, watering the freekeh with a little broth from time to time as needed until the freekeh is completely cooked.
  6. Place the freekeh in a wide dish, distribute the meat over the surface and sprinkle the almonds.
