Maqluba is one of the most famous main dishes in Jordan and Palestine. It is prepared from a variety of fried vegetables that are arranged in a pot in the form of layers with rice.

Maqluba with eggplant and meat

Ingredients

  • Three cups of basmati rice.
  • Three medium-sized eggplants.
  • One and a half kilograms of chopped meat.
  • Two medium-sized onions.
  • A tablespoon of salt.
  • A teaspoon of mixed spices.
  • A teaspoon of cinnamon.
  • Three quarters of a teaspoon of turmeric.
  • ¼ teaspoon of black pepper.
  • Three tablespoons of ghee.
  • Half a cup of fried nuts.

How to prepare

  • Soak the rice in warm water for fifteen minutes, then drain it.
  • Cut the eggplant as desired, sprinkle a little salt over it and leave it aside for thirty minutes.
  • Fry the eggplant in hot oil, then put dry paper over it to absorb excess oil.
  • Cut one onion into quarters, then put it in a pot with the meat and spices.
  • Add six to seven cups of water, and boil the meat for fifty to sixty minutes until completely cooked.
  • Remove the meat from the broth, then add a little water until the amount of broth becomes five cups.
  • Cut the onion into thin slices, then fry it in a pot with oil or ghee until it turns golden.
  • Place the meat pieces on top of the onions, then the eggplant slices, and distribute the rice over the eggplant.
  • Add the broth to the pot until the rice is covered, then cook the upside down until the rice is cooked, for thirty to thirty-five minutes.
  • Flip the maqluba onto a serving plate, garnish with nuts, and serve with yoghurt or salad.

  • Two teaspoons of mixed spices.
  • A sprinkle of ground cardamom.
  • Three cinnamon sticks.
  • Almonds and toasted pine nuts as desired.

How to prepare

  • Boil the meat with the addition of salt, cinnamon, cardamom, spices, onions, garlic, and an appropriate amount of water.
  • Fry the sweet potatoes until they turn golden.
  • Remove the meat from the broth, put it in another pot, then distribute the sweet potatoes over it, then the soaked and drained rice.
  • Cover the rice with hot meat broth, cook it until the rice is cooked, then serve it with almonds and toasted pine nuts.
