Ingredients

  • Two cups of rice.
  • Three and a half cups of cold water.

How to prepare

  • Wash the rice under cold water in a large strainer, then filter it and transfer it to a medium-sized bowl.
  • Soak the rice for half an hour. This period is sufficient for American rice or jasmine rice, but for basmati rice, it requires approximately an hour.
  • Drain the rice from the soaking water and place it in a medium-sized, non-stick pot, then add both: oil and salt and stir gently with a wooden spoon, and let it boil quickly, then cover the rice and leave it on high heat for five minutes or until the rice absorbs most of the water and appears Its surface has small bubbles.
  • Reduce the heat, then gently stir the rice with a fork or wooden spoon. This allows the rice grains to expand during the cooking process.
  • Cover the pot tightly and leave it on the fire for twenty minutes. During that time, stir the rice twice, preferably with a fork, until the rice grains separate from each other.
  • When the rice dish is almost done, that is, after 15 minutes of stirring, and before the rice grains stick to the pot, transfer the rice to another bowl.
  • Mix the yogurt with two tablespoons of oil and six tablespoons of cooked rice in a smaller bowl, then spread the bottom of the rice pot with the mixture, then add the rest of the rice to it, and leave it on the heat for 15 minutes until the bottom of the rice is crispy.
  • During the last five minutes of cooking, raise the heat, being careful so that the rice does not burn, and this is how you get a crispy layer of rice.
  • Place a flat plate on top of the rice for serving and flip them together like upside down. Here, the thin and crispy layer of rice will be on the surface of the plate.
