Meat madghout

Meat Madghout is one of the dishes that is prepared in large quantities at weddings and banquets, especially in the Gulf countries. You can simply prepare this dish with a pressure cooker, and the method is up to you.

the ingredients

  • 2 kilos of lamb cut into large pieces with bones.
  • A large onion, cut into thin julienne wings.
  • A teaspoon of crushed garlic.
  • A peeled and finely chopped tomato.
  • Ground spices (a spoonful of black pepper, ground cinnamon, ground cardamom, and a spoonful of ground lime).
  • Chopped parsley.
  • Roasted nuts.
  • Salt, to taste.

Setting method

  • First, you must wash the meat well with cold water and soak it in cold water with salt added for a quarter of an hour.
  • In the pressure cooker, add the meat pieces without adding any fat, then add the onion slices, tomatoes, garlic, and ground spices. Stir all the ingredients until they mix together.
  • Close the pressure cooker without adding any liquids, and leave it until it is completely cooked, and the meat will release all its juices and absorb them little by little, and you will get tender, delicious-tasting pressed meat.
  • After the meat is completely cooked, season it with salt.
  • Pour the pressed meat into a flat plate and garnish it with nuts and chopped parsley, and serve alongside it a vegetable salad, various appetizers, and white rice. You can also serve it with ragag bread.

Setting method

  • Add the tomatoes, carrots, peppers, and garlic, stir all the ingredients, and close the pot until the meat is completely cooked.
  • After the meat is cooked, add the ground tomatoes and spices mentioned above, and stir with the meat, then add the soaked rice and stir with the meat, tomato paste, and spices.
  • Add enough water to cover the rice and meat, season with salt, and leave it on the fire until the rice is completely cooked.
  • Pour the kabsa into a flat bowl, garnish it with fried raisins and toasted nuts, and serve it hot alongside the spicy daqoos salad.
