Peppered bulgur

Ingredients

  • Two cloves of crushed garlic.
  • A teaspoon of cumin.
  • A teaspoon of turmeric.
  • One sweet red pepper, finely chopped.
  • One sweet green pepper, finely chopped.
  • Two cups of coarse bulgur.
  • One peeled and finely chopped tomato.
  • One piece of chopped onion.
  • A quarter cup of corn oil.
  • Two tablespoons of tomato paste.
  • Half a teaspoon of black pepper.
  • A tablespoon of butter.
  • a tablespoon of salt.
  • Three cups of water.

salad Components:

  • A quarter cup of olive oil.
  • One finely chopped onion.
  • Two finely chopped tomatoes.
  • Half a teaspoon of salt.
  • Half a teaspoon of dried mint.
  • Two tablespoons of pomegranate molasses.
  • ¼ teaspoon of black pepper.

 

How to prepare

  • Wash the bulgur and soak it for a few minutes.
  • Put the oil and butter in a pot on the fire, then add the onions and garlic and stir until they soften.
  • Add red and green sweet peppers and stir until cooked.
  • Add salt, cumin, black pepper and turmeric and stir well.
  • Add the bulgur and stir for two minutes until it softens and acquires a delicious flavour.
  • Add tomato paste, chopped tomatoes and water, and leave it until it boils, then cover the pot, and leave it on low heat until it is cooked. It is possible to add more water gradually according to the need for the bulgur.
  • Prepare the salad, put the onions, olive oil, tomatoes, mint, pomegranate molasses, black pepper and salt in a plate, stir the ingredients well together, then serve it alongside the bulgur.

Bulgur with green beans

  • Five glasses of water.
  • Two teaspoons of salt.
  • half cup of olive oil.
  • Three cups of coarse bulgur.
  • One cup of chopped coriander.
  • chopped onion
  • Three cloves of crushed garlic.
  • Half a kilogram of green beans.
  • ¼ teaspoon of black pepper.
  • Half a teaspoon of ground cinnamon.
  • A quarter cup of chopped dill.

 

How to prepare

  • Wash the bulgur well, soak it in water for fifteen minutes, then drain it from the water and leave it aside.
  • Place the oil in a pot over medium heat. When the oil is hot, add the onions and garlic and stir for a few minutes until the onions wilt.
  • Add green beans and stir the ingredients together for a few minutes.
  • Add the bulgur and stir it with the beans for a few minutes.
  • Add dill, cinnamon, coriander, black pepper and salt and stir together.
  • Add water and let it boil, then cover the pot and leave on low heat for thirty minutes until cooked.
  • Place the bulgur with green beans in a plate and garnish with coriander.

Bulgur with meat and cabbage

  • Small spoon of salt.
  • A teaspoon of meat spice.
  • One chopped hot pepper.
  • chopped onion
  • Two cups of coarse bulgur.
  • Three tablespoons of ghee.
  • Two cups of cabbage cut into slices.
  • ¼ teaspoon of black pepper.
  • A tablespoon of tomato paste.
  • A quarter kilogram of coarsely minced meat.
  • Two cups of water or stock - as desired.
  • One cup of chopped tomatoes.
  • A handful of fried nuts.

 

How to prepare

  • Wash the bulgur well, and soak it in water for thirty minutes.
  • Place the ghee and onions in a pot over medium heat, and stir until wilted.
  • Add black pepper, meat spices, minced meat, and salt and stir well until the meat is cooked.
  • Add tomato paste, chili pepper, tomatoes and cabbage and stir for three to four minutes until the cabbage softens.
  • Filter the bulgur, and add it to the meat mixture with vegetables.
  • Add water, and leave the bulgur until it absorbs most of the water, then cover the pot, and leave it on low heat for thirty minutes until it is completely cooked.
  • Pour the bulgur into the dish, sprinkle the nuts on top, and serve with spicy tomato sauce.
